Loaded Cauliflower Nachos

Looking for the perfect snack or appetizer? Then you got to try this recipe for Loaded Cauliflower Nachos. Roasted cauliflower makes the perfect base for these loaded nachos, and is an easy swap for tortilla chips. Top them with your favourite fresh ingredients such as ripe avocados and it’s the perfect dish!

Ingredients – Roasted Cauliflower

  • 1 cauliflower
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • salt & pepper

 

Ingredients – Toppings

  • 2 cups shredded cheese
  • 2 ripe avocados, sliced
  • 2 jalapenos, sliced
  • ¼ cup sour cream
  • 1 cup cherry tomatoes, halved
  • 1 – 2 green onions, sliced
  • ¼ cup cilantro
  • ½ teaspoon red chili flakes
  • 2 limes, halved

 

Method

  1. Preheat oven to 400°F.
  2. Line baking sheet with parchment paper.
  3. Slice cauliflower into florets and place on baking sheet.
  4. Top with olive oil and seasonings, and mix together.
  5. Add to oven and roast for 40 to 45 minutes until cauliflower is cooked to your liking. Remove half way and move cauliflower around with spoon.
  6. Remove cauliflower from oven and top with shredded cheese.
  7. Add cauliflower back to oven for 8 to 10 minutes until melted. Remove from oven and top with all toppings. Garnish with dollops of sour cream, red chili flakes, and cilantro.
  8. Squeeze fresh lime all over.
  9. Serve immediately and enjoy!
