Here’s a quicker and easier way to whip up a big batch of chocolate chip cookies: try Cookie Brittle! This crispy, buttery treat is baked as a single large sheet and then broken into bite-sized pieces, skipping the need to scoop individual portions. This recipe is the perfect hack for holiday baking or entertaining when time is tight, or oven space is limited.

Bake Time: 30 minutes
Total Time: 40 minutes
Yield: 12 servings

 

Ingredients

  • 1 cup (2 sticks) unsalted butter, melted, cooled
  • 1 cup (215 g) packed light brown sugar
  • 1 teaspoon pure vanilla extract
  • 2 cups (240 g) all-purpose flour
  • ½ teaspoon kosher salt
  • ½ cup semisweet chocolate chips

 

Method

  1. Preheat oven to 350°F.
  2. In large bowl, whisk butter, brown sugar, and vanilla until combined.
  3. Add flour and salt, stir with a wooden spoon to combine.
  4. Stir in chocolate chips.
  5. Spread dough on a parchment-lined baking sheet.
  6. Pat into a thin, even layer with your hands (the dough may not go all the way to the edge).
  7. Bake until golden brown all over, for 18 to 20 minutes.
  8. Remove from oven and let cool, then break into pieces.
  9. Enjoy!
