Layer over orzo pasta, whole grain rice, farro, quinoa – whatever you have on hand! Top with a drizzle of olive oil, fresh lemon juice, and a pinch of salt. Enjoy!

Ingredients

  • 1 bunch broccolini, trimmed
  • 1 pack of cherry tomatoes, halved
  • 1 red onion, sliced
  • ½ lemon, thinly sliced
  • 3 tablespoon extra virgin olive oil
  • 1 teaspoon cumin
  • ½ teaspoon red pepper flakes
  • salt and pepper
  • 1 large block of feta cheese, about 6-8 ounces, cut into 1 inch slices

 

Method

  1. Preheat oven to 400°F.
  2. Toss all vegetables and seasonings together on a large baking sheet.
  3. Nestle slices of feta cheese amongst the veggies.
  4. Roast in the oven for 15 to 20 minutes.
  5. Layer over orzo pasta, whole grain rice, farro, quinoa – whatever you have on hand!
  6. Top with a drizzle of olive oil, fresh lemon juice and a pinch of salt.
  7. Enjoy!
