Pumpkin Chocolate Chip Cookies

It took Rhona Shore, our Managing Director, six months to dig up a recipe to share with us from her cookbook archives, but she finally did it! Be sure to check out her recipe for Pumpkin Chocolate Chip Cookies – perfect for fall, you’ll agree that it was worth the wait!

Bake Time: 10 minutes
Total Time: 25 minutes
Yield: 24 cookies

 

Ingredients

  • ½ cup butter
  • ½ cup pumpkin seed butter
  • ½ cup sugar
  • ½ cup brown sugar
  • 1 egg
  • 1¼ cup flour
  • ½ tsp baking powder
  • ¾ tsp baking soda
  • ¼ tsp salt
  • 1 cup of chocolate chippits, or sunflower seed or nuts

 

Instructions

  1. Preheat oven to 375°F.
  2. Thoroughly whisk together the butter, pumpkin seed butter, sugar, brown sugar, and egg.
  3. Sift together flour, baking powder, baking soda, and salt. Mix into the wet ingredients.
  4. Drop rounded tablespoonfuls of cookie dough onto a baking sheet.
  5. Flatten each cookie with a fork in a criss cross pattern, and bake for 10 minutes.
  6. Remove cookies to a baking rack or paper towel to cool.
  7. Enjoy!
